Garlic Pine Nut Spinach

Ingredients
- 1tablespoon pure olive oil
- 2-- garlic cloves, minced
- 2-- (10-ounce) bags spinach, well washed
- 1/4cup pine nuts, toasted*
- 1/2teaspoon salt
- pinch cayenne pepper
Instructions
- Heat oil in a large skillet over medium heat. Add garlic and cook, stirring, 1 minute or until it begins to turn brown. Immediately add spinach and cook, stirring, 1 minute or until spinach begins to wilt. Add pine nuts, salt and pepper.
*To toast pine nuts: Cook pine nuts in a dry nonstick skillet over medium heat, stirring frequently, for about 2 minutes or until golden brown
