Ginger Chicken with Peaches and Black Beans

  • Yield: 6 servings


2 1/2pounds skinless, boneless chicken breasts
-- Salt and pepper
1/2teaspoon garlic powder
1teaspoon paprika
1-- (15-ounce) can light sliced peaches, drained and cut into chunks
1teaspoon ground ginger
2tablespoons lime juice
1teaspoon minced garlic
1/2cup chopped green onions (scallions)
2-- (15-ounce) cans black beans, undrained


  1. Preheat oven 350F.
  2. Place chicken in a 2-quart oblong baking dish. Season with salt and pepper, garlic powder, and paprika. 
  3. In a bowl, combine peaches, ginger, lime juice, garlic, green onions and black beans.  Spoon over chicken, cover, and bake 45 to 60 minutes, until chicken is tender.
