Ginger Chicken and Black Beans

Ingredients
- 2 1/2pounds skinless, boneless chicken breasts
- -- Salt and pepper to taste
- 1/2teaspoon garlic powder
- 1teaspoon paprika
- 1-- (15-ounce) can light sliced peaches, drained and cut into chunks
- 1teaspoon ground ginger
- 2tablespoons lime juice
- 1teaspoon minced garlic
- 1/2cup chopped green onions
- 2-- (15-ounce) cans black beans, undrained
Instructions
- Preheat oven to 350F.
- Place chicken in a 2-quart oblong baking dish. Season with salt and pepper, garlic powder and paprika.
- In a bowl, combine peaches, ginger, lime juice, garlic, green onions and black beans. Spoon over chicken, cover, and bake 45 to 60 minutes, or until chicken is tender.
