Golden Harvest Soup

1cup chopped sweet onion
1tablespoon olive oil
4cups mashed cooked butternut squash or pumpkin
3cups chicken broth
2cups unsweetened applesauce
1 1/2cups milk
1-- bay leaf
1tablespoon lime juice
1teaspoon curry powder
1/2teaspoon ground cinnamon
1/2teaspoon salt
1/4teaspoon each pepper and ground nutmeg (optional)


1. In a large saucepan, sauté onion in oil until tender. Add the rest of the ingredients and simmer, uncovered, for 30 minutes or so. Serves 10.
