Good Luck Mississippi Caviar

  • Yield: 6 to 8 servings


-- Water
2cups frozen black-eye peas
1/4cup minced red onions
1/2-- red bell pepper, cored, seeded and minced
1/2-- green bell pepper, cored, seeded and minced
2tablespoons apple cider vinegar
2tablespoons extra-virgin olive oil
1/4cup minced fresh parsley
-- Salt and freshly ground black pepper, to taste



  1. Bring a pot of water to boil. Add peas, bring to a simmer and cook 8 to 10 minutes until tender. Drain and cool.
  2. Place peas in a bowl and add remaining ingredients. Mash lightly with a fork. Serve chilled.
