Granola Energy Bars
- Yield: 2 1/2 dozen
Ingredients
- 1/2cup sesame seeds
- 1/2cup shelled sunflower seeds
- 1/4cup wheat germ
- 3/4cup honey
- 3/4cup chunky peanut butter
- 3cups oat flakes
- 1/2cup walnuts, filberts, or almonds
- 1/3cup dried apricots
- 1/3cup dried prunes
- 1/3cup raisins
Instructions
- Spread the sesame sees in a 7×11-inch baking dish and cook uncovered in the microwave for 5 minutes or until seeds are golden brown. Stir seeds several times while cooking. Set aside. Follow same procedure for sunflower seeds and wheat germ. Place honey in a 2-quart bowl and microwave 2 1/2 minutes. Add peanut butter and cook 1 minute longer. Combine sunflower seeds, wheat germ, honey mixture, oat flakes, nuts, apricots, prunes, and raisins; mix well. Spread half of the sesame seeds back into the baking dish. Press the oat mixture into the pan. Sprinkle top with remaining sesame seeds and press firmly. Chill 1 hour. Cut into bars and wrap each in plastic wrap. Wrapped bars will keep indefinitely.
