Granola Orange Bread

Ingredients
- 2cups warm water
- 2tablespoons yeast, dry
- 1/3cup granulated sugar
- 1cup non-fat dry milk
- 1-1/2teaspoon salt, if desired
- 3-1/2cups all purpose flour
- 2cups granola
- 1-1/2cup California walnuts, chopped
- 1/4cup orange zest, grated
Instructions

Stir warm water, yeast and sugar together; let stand a few minutes, until yeast is dissolved and mixture is foamy.

Add dry milk, salt if desired, and 2 cups flour. Beat vigorously 1 – 2 minute, until batter is smooth. (The paddle attachment on a heavy-duty mixer works well.)

Add remaining flour, the granola, walnuts and orange zest and beat until batter is very stiff and heavy.

Divide between two loaf pans, 8 ½ x 4 ½ x 2 ½ inches, which have been coated with no stick cooking spray. Smooth surface of batter with wet fingertips. Let batter rise to tops of pans, about 45-60 minutes.

Bake at 375F about 60 minutes, until well browned. Remove from pans and place on cooling rack. Cool before slicing.

Each loaf makes 12 slices.
This makes more bread than you need for 12 servings, but it’s worth making plenty to go with other brunch and breakfast items.
