Greek Pasta Salad
- Yield: 6 to 8 servings
Ingredients
- 1/2cup nonfat sour cream
- 1tablespoon light mayonnaise
- 2tablespoons lemon juice
- 2tablespoons skim milk
- 1/3cup crumbled feta cheese
- 2tablespoons chopped parsley
- 1/2teaspoon dried mint
- 1teaspoon dried oregano
- -- Black pepper to taste
- 1-- (12-ounce) package medium shell pasta
- 2cups chopped tomatoes
- 2cups peeled and diced cucumber
- 1cup sliced green onions
- 1-- (3 1/2-ounce) jar capers, drained
Instructions
- In a large bowl, combine the sour cream, mayonnaise, lemon juice, milk, feta, parsley, mint, oregano and pepper. Cover and refrigerate. Meanwhile, prepare pasta according to package directions, omitting oil and salt. Rinse and drain well. To the mayonnaise mixture, add the pasta, tomato, cucumber, green onions and capers. Stir to mix well. Cover and chill to blend the flavors.
Note: To reduce the sodium, decrease the capers.
