Honey-Glazed Sweet Potatoes
- Yield: 8 servings
- 5 1/2pounds sweet potatoes
- 3/4cup honey
- 2tablespoons lightly chopped rosemary leaves
- Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into 1-inch-wide slices. Combine the honey and rosemary in a large bowl, add the sweet potatoes, season with sea salt and pepper, and toss to coat. Place on the baking sheet and roast for 20-to 25 minutes, or until tender and caramelized.
