kale and potato pie

  • Yield: 6 servings


1tablespoon olive oil
.5-- chopped onion
1units clove chopped garlic
1-- grated potato
1-- grated sweet potato
1dash bunch kale-- chopped
1pinch pepper
1pinch salt
.5cup any grated cheese
1piece bread or pizza dough
1/4cup butter


  1. Pre-heat oven to 375 degrees. 
  2. Saute the onions.  Add the grated potatoes and kale,  
  3. Divide up the dough into balls about the size of an ice cream scoop and roll them out like pizzas, two for each pie. 
  4. Scoop filling on the bottom shell, cover with cheese and another shell and pinch the edges together.   
  5. Spread melted butter (or egg, or water) over the shell (optional) and bake till they are brown. 
  6. They are good warm or cold.  They pack well as a sandwich.
