Kale Salad

1bunch Dinosaur Kale
1cup shredded carrots
1/2whole avocado
3tablespoons fresh lemon juice
1/2cup crush cashews
2tablespoons soy sauce


  1. Wash and separate kale leaves from the Kale ribs.
  2. Thinly slice the Kale.
  3. Combine all the ingredients (except the nuts) and mash together with fingers until Kale is completely covered.
  4. Set Kale salad aside on the counter for 30 minutes to let let Kale soften.
  5. Add cashews
  6. Enjoy!
