- 1-- Chicken, quartered (1/2-2-1/2 pound)
- 1/4cup vegetable oil
- 1teaspoon black peppercorns
- 1/4cup lemon juice
- 1/2teaspoon dried thyme
Combine lemon juice, oil, and thyme. Coarsely grind or crush pepper; add to lemon mixture. Place chicken in shallow dish; pour lemon mixture over. Marinate, refrigerated, for 2 to 3 hours, turning chicken occasionally. Cook chicken on greased cooking grate over hot coals or on a medium-high gas setting, turning frequently, about 20 minutes on each side or until chicken is no longer pink inside.
