Lemon Pepper Chicken

2teaspoons olive oil
1/3cup minced onion
1-- garlic clove, minced
1 1/2cups applesauce
1/2teaspoon ground black pepper
1/4teaspoon paprika
1/4teaspoon red pepper flakes
1/4teaspoon poppy seeds
1-- lemon, juiced and zested
-- Apple juice or water
4-- chicken breasts, boned and skinned


  1. Heat olive oil in a medium saucepan. Add onion and garlic. Saute for five minutes or until soft. Reduce heat. Add applesauce. Stir well. Add pepper, paprika, red pepper flakes, poppy seeds and lemon juice and zest. Simmer uncovered for 20 minutes, stirring occasionally. If mixture is too thick, add a few tablespoons of applesauce or water to thin.
  2. Preheat grill. Grill chicken for 7 minutes over hot coals. Brush with barbecue sauce. Cook 5 minutes. Turn meat and baste again. Cook 5 more minutes or until chicken is cooked through, but not dry. Remove from grill. Bias slice cooked chicken; fan slices on a plate, and serve with additional sauce.
