Mediterranean Walnut Spread in Pita Pocket

1/4cup olive oil
1/2cup minced onions
3cloves garlic, minced
2cups toasted California walnuts
1cup canned chick peas, rinsed and drained
1/4cup chopped fresh cilantro
1/4cup orange juice
2teaspoons orange zest
1teaspoon salt
1teaspoon pepper
4-- pitas, halved
1-- English cucumber, sliced
2-- tomatoes, sliced
1/2cup pea shoots or shredded lettuce


  1. In skillet, heat oil over medium heat. Add onions and garlic, stirring often, until onions are translucent, about 5 minutes. Let cool.
  2. In food processor or blender, combine walnuts, chick peas, cilantro, orange juice, zest, salt, pepper and onion mixture with all the oil. Process until smooth.
  3. Warm pitas in oven or microwave just until soft and pliable. Divide walnut spread in each half. Arrange cucumber slices, tomatoes and pea shoots in pockets.
