Ingredients
- 2large ripe tomatoes
- 1medium red onion, minced
- 1medium green bell pepper, minced
- 3/4cup red wine vinegar
- 1tablespoon minced cilantro
- 1tablespoon minced parsley
Instructions
- Mix all the ingredients in a nonreactive bowl. Cover and refrigerate 1 hour before serving; serve immediately – do not hold overnight. Makes 2 cups.
