Paleo Pizza
Ingredients
- Crust
- 1large eggplant
- 1tablespoon extra-virgin olive oil (for greasing the pan, if not using parchment paper)
- 1/4cup almond flour
- 2tablespoons coconut flour
- 2tablespoons ground flaxseed
- 1 organic egg
- 1teaspoon Mrs. Dash Italian seasoning
- 1/2teaspoon Himalayan sea salt
- 1/2teaspoon red pepper
- Topping Ideas
- Tomato sauce
- Pesto
- Grilled chicken
- Meatballs
- Roasted tomatoes
- Sautéed spinach
- Sautéed onions
- Bacon
- Fresh basil
- Parmesan cheese
Instructions
- Preheat oven to 350F
- Peel eggplant and grate into a bowl; let sit for 10 minutes while preparing topping ingredients.
- Using a paper towel or cheesecloth, wrap grated eggplant and squeeze to remove excess water.
- Place eggplant back in bowl and combine with remaining crust ingredients; mix well
- Grease baking sheet with olive oil or line with parchment paper; place pizza dough on baking sheet and roll out into desired shape
- Bake for 15 minutes
- Place a sheet of parchment paper or greased tin foil on top of the pizza and carefully flip onto the new piece of paper/foil
- Bake on the other side for 10 minutes
- Add toppings of choice
- Broil on high for 5 minutes
