Ingredients

Crust
1large eggplant
1tablespoon extra-virgin olive oil (for greasing the pan, if not using parchment paper)
1/4cup almond flour
2tablespoons coconut flour
2tablespoons ground flaxseed
1 organic egg
1teaspoon Mrs. Dash Italian seasoning
1/2teaspoon Himalayan sea salt
1/2teaspoon red pepper
Topping Ideas
Tomato sauce
Pesto
Grilled chicken
Meatballs
Roasted tomatoes
Sautéed spinach
Sautéed onions
Bacon
Fresh basil
Parmesan cheese

Instructions

  1. Preheat oven to 350F
  2. Peel eggplant and grate into a bowl; let sit for 10 minutes while preparing topping ingredients.
  3. Using a paper towel or cheesecloth, wrap grated eggplant and squeeze to remove excess water.
  4. Place eggplant back in bowl and combine with remaining crust ingredients; mix well
  5. Grease baking sheet with olive oil or line with parchment paper; place pizza dough on baking sheet and roll out into desired shape
  6. Bake for 15 minutes
  7. Place a sheet of parchment paper or greased tin foil on top of the pizza and carefully flip onto the new piece of paper/foil
  8. Bake on the other side for 10 minutes
  9. Add toppings of choice
  10. Broil on high for 5 minutes
