PAPAYA FRUIT BOAT

Ingredients
- 2-- ripe papayas OR 2 small cantaloupes
- 1cup non-fat raspberry yogurt
- 2/3tablespoon sweet and spicy California walnut sprinkles (see recipe)
- 3/4cup raspberries
- 4sprigs fresh mint, if desired
Instructions

Halve the papayas or cantaloupes and scrape out their seeds. Shave a thin slice from the bottom of each half, to keep them from wobbling.

Just before serving, stir together the yogurt and 1/3 cup sprinkles. Spoon the mixture into the papaya or cantaloupe halves and sprinkle each with one-quarter of the remaining sprinkles.

Garnish with raspberries and a sprig of mint if desired, and serve immediately.
