Pasta with Black Beans

Ingredients
- 1-- (8-ounce) package shell-type pasta
- 1tablespoon olive oil
- 1 1/2teaspoons minced garlic
- 1bunch green onions, thinly sliced
- 1teaspoon ground cumin
- 2tablespoons lime juice
- 1-- (15-ounce) can black beans, drained and rinsed
- -- Salt and pepper to taste
- 1cup chopped Roma tomatoes
- 2tablespoons chopped fresh cilantro
Instructions
- Prepare the pasta according to the package directions, omitting oil and salt. Drain; set aside.
- Meanwhile, heat the olive oil in a medium saucepan over medium heat. Add the garlic, green onions and cumin and saute for 2 minutes. Add the lime juice, black beans, salt, pepper, tomatoes and cilantro, stirring until just heated. Remove from heat, toss with pasta and serve.
Note: This can be served over brown rice or couscous instead of pasta.
