Pasta with Black Beans

  • Yield: 4 servings


1-- (8-ounce) package shell-type pasta
1tablespoon olive oil
1 1/2teaspoons minced garlic
1bunch green onions, thinly sliced
1teaspoon ground cumin
2tablespoons lime juice
1-- (15-ounce) can black beans, drained and rinsed
-- Salt and pepper to taste
1cup chopped Roma tomatoes
2tablespoons chopped fresh cilantro


  1. Prepare the pasta according to the package directions, omitting oil and salt.  Drain; set aside.
  2. Meanwhile, heat the olive oil in a medium saucepan over medium heat.  Add the garlic, green onions and cumin and saute for 2 minutes.  Add the lime juice, black beans, salt, pepper, tomatoes and cilantro, stirring until just heated.  Remove from heat, toss with pasta and serve.

Note:  This can be served over brown rice or couscous instead of pasta.
