Pasta with Turkey Sausage, Tomatoes and Mozzarella

2tablespoons olive oil
1-- garlic clove, crushed
1-- medium onion, chopped
2-- (14 1/2 ounce) cans whole peeled tomatoes with juice, broken up with spoon
1pound Italian turkey sausage, cut into 1/2-inch slices
1/4teaspoon dried red pepper flakes
1pound penne
8ounces smoked mozzarella cheese, cut into 1/2-inch cubes
1/4cup Parmesan cheese, freshly grated


  1. Heat oil in skillet over medium heat. Add garlic and cook 1 minute; discard garlic. Add onion and cook until softened, about 5 minutes.
  2. Add tomatoes with juice, sausage, and pepper flakes. Cover and cook over medium-high heat until sauce is thickened, about 20 minutes.
  3. Meanwhile, cook pasta according to package directions. Drain and toss with sauce in large bowl.
  4. Toss with mozzarella cheese. Sprinkle with Parmesan cheese. Serve hot.
