Potato Soup

  • Yield: 3 to 5 servings


4-- potatoes
2-- onions
3-- stalks of celery
1/2teaspoon salt
2tablespoons butter
1cup milk
1cup chicken broth
1/2teaspoon paprika
1/4teaspoon pepper


  1. Peel and dice potatoes. Add potatoes, onions, and celery into heavy pot with enough boiling water to cover potatoes, onions and celery.  Add salt, cover and cook until potatoes are tender.  Drain and press through a sieve.  Add butter and heat.  Add enough milk and broth to reach desired consistency.  Add pepper, paprika and additional salt if needed.  Simmer 10-15 minutes.  Serves 3-5.
