Pumpkin and Bean Soup

Ingredients
- 1can white beans, low-sodium
- 1small onion, finely chopped
- 1cup water
- 1can pumpkin puree
- 1 1/2 cups 100% apple juice
- 1/2teaspoon cinnamon
- 1/8teaspoon nutmeg, allspice, or ginger
- 1/2teaspoon black pepper
- 1/4teaspoon salt
Instructions
- Blend white beans, onion, and water with a potato masher or blender until smooth.
- In large pot, add pumpkin, juice, cinnamon, nutmeg, black pepper, and salt. Stir.
- Add blended bean mix to pot. Cook over low heat for 15-20 minutes, until thoroughly warmed. Serve.
