Pumpkin Spiced Coconut Pancakes

Ingredients
- 3cups Flour (or 1.5 cups of almond flour & 1.5 cups of oat flour
- 2tablespoons sugar
- 7teaspoons baking powder
- 1/2teaspoon cinnamon
- 1/8teaspoon cardamom
- 1teaspoon salt
- 1/2cup pumpkin puree
- 6tablespoons Oil
- 1cup coconut milk - found in cold dairy section
Instructions
In a bowl, mix together the dry ingredients. Next add in the milk, pumpkin puree and oil. Stir until just combined. Heat slightly oiled pan on medium heat. Pour batter into heated pan and cook until both sides are golden brown. Serve warm with real maple syrup.
