- Yield: 4 cups
- 5ounces bag of baby spinach and mixed greens
- 1/2cup quinoa ( cooked)
- 1/2cup sesame seed ginger dressing
- 1small cucumber (diced)
- 1pint fresh fruit (whole blueberries, sliced strawberries, diced peaches)
Toss first four ingredients.
Let set for an hour.
Add fruit pieces immediately before serving.
