Raw Beets with Jicama, Apple & Mustard Dressing

Ingredients

Beets
1cup kale, thinly sliced
1cup raw red beets, match stick cut
1cup jicama, match stick cut
3/4cup raw apple, with skin, match stick cut
2tablespoons cilantro, chopped
1 lime, zested
Dressing
1/4cup plain nonfat Greek yogurt
1teaspoon fresh ginger, grated
2tablespoons honey
1/4cup sherry vinegar
3teaspoons yellow mustard
1tablespoon raw onions, minced
1teaspoon raw garlic, grated
1teaspoon dried tarragon, chopped
1teaspoon raw red hot chili peppers, minced

Instructions

  • Whisk dressing ingredients together.
  • Toss the raw vegetables with the dressing. Serve immediately.
