Rice and Veggies One-Pot

RIce and vegetable one pot recipe.

2tablespoons olive oil
1 sweet onion, diced
2cloves garlic, minced
1/2cup carrots, diced
4ounces pancetta, diced
2tablespoons fresh parsley, diced
2 bay leaves
1 15-oz can of cannellini beans, drained and rinsed
3cups vegetable stock
1/2cup brown rice


In a large pot, sauté 2 tablespoons of olive oil with onion, garlic, carrots,  pancetta and parsley. Cook until onion is soft; add cannellini beans, bay leaves, vegetable stock and brown rice. Simmer for about 30 minutes or until rice is cooked. Top with fresh parsley.
