Salsa de Chipotle

  • Yield: 2 1/2 cups



  1. Heat the olive oil in a skillet over medium-high heat.
  2. Add the onion and garlic and cook until just starting to soften, about 1 minute.
  3. Add the tomatoes, chipotle peppers, oregano, salt, and sugar and cook over low heat until the flavors blend, about 10 minutes.
  4. Remove the salsa from the heat, let it cool, then puree it in a blender until smooth.
