Salsa de Chipotle
- Yield: 2 1/2 cups
- Heat the olive oil in a skillet over medium-high heat.
- Add the onion and garlic and cook until just starting to soften, about 1 minute.
- Add the tomatoes, chipotle peppers, oregano, salt, and sugar and cook over low heat until the flavors blend, about 10 minutes.
- Remove the salsa from the heat, let it cool, then puree it in a blender until smooth.
