Sayonara Classic Carbonara!
- Yield: 4 servings
Ingredients
- 4quarts water
- 1teaspoon salt
- .50pound dry spaghetti
- 2tablespoons olive oil
- 1package tempeh bacon
- 1whole chopped onion
- 1whole sliced yellow summer squash
- 2cups of your favorite marinara sauce
- .50cup nutritional yeast flakes
- .50cup pine nuts
- 1teaspoon salt
Instructions
Boil water and salt for noodles. Prepare noodles as directed on package.
While the spaghetti is cooking:
Heat oil in large saute pan, add Tempeh bacon when oil is hot, brown Tempeh for 2-3 minutes on each side until crisp and browned.
Set bacon aside
Keeping oil in pan, saute the chopped onion and sliced summer squash for 5 minutes.
Add the marinara sauce and bring to a boil; add the Tempeh after you have diced it into bite size pieces.
Stir in prepared noodles, coat noodles well
For the "Better than Parmesan" topping, add yst, nuts and salt into s small food processor and process until nuts are finely chopped but mixture is still dry. About 10-15 seconds processing time
Portion four servings of Carbonara onto a plate
Add "Better than Parmesan" topping
Devour!
i sometimes add hot sauce or pepper flakes if i feel spicy!
