Scallion and Chili Salmon Burgers

Ingredients
- 1pound skinless salmon filet
- 1 egg white
- 4 scallions, finely chopped
- 1/4teaspoon chili powder
- 1/2teaspoon salt
- 1teaspoon lime juice
- 2tablespoons oat bran
- vegetable oil, for searing
- buns, to serve
- sliced tomato, to serve
- lettuce, to serve
- ketchup, mustard, relish, to serve
Instructions
1. Using a sharp kitchen knife, finely chop the salmon. Alternately, cut salmon into chunks and pulse in a food processor until coarsely chopped.
2. Whisk together egg white, scallions, chili powder, salt and lime juice and combine with chopped salmon. Sprinkle oat bran on top of mixture and let sit for 20 minutes.
3. Heat vegetable oil in a large skillet over medium high heat until shimmering, then form 1/4 of the salmon mixture into a patty and sear until browned on one side. Flip and continue to sear until desired doneness, or remove once brown crust has formed and finish on a hot grill. Serve on toasted buns with all the classic burger trimmings.
