Chicken and Sweet Potato Shepherd’s Pie

2-- lbs.Sweet potatoes
4tablespoons butter
1/4cup sour cream
1/4cup fresh chives
1/2cup gruyere cheese
1/4cup parmesean cheese
3tablespoons salt
3tablespoons pepper
1 1/2pounds ground chicken
1/2pound ground pork
1large onion
6-- carrots
1-- bag peas
3cloves garlic
3cups chicken stock
1/2cup flour
1/4cup olive oil


Skin and boil potatoes until cooked. In the meantime, saute ground chicken and pork in olive oil with onions and garlic. Take out before they are fully cooked, in the same pan saute the carrots until tender and take out and put with chicken mixture. In the same pan make the gravy using butter, oil, flour, chicken stock, salt, and pepper. Add the chicken/pork/carrot mixture into 13 by 9 inch pan and add the defrosted peas evenly. Pour over gravy mixture.
When sweet potatoes are cooked mash with butter, sour cream, gruyere cheese, parmesean cheese, and fresh chives. Evenly spread potatoe mixture over chicken and gravy and place in oven under the high broiler setting until the potatoes are browned. Take out of oven and enjoy!
