Slow Cooker Beef Carnitas

A flavorful, healthy taco recipe sure to become a family favorite.


2teaspoons chili powder
1teaspoon cumin
1teaspoon oregano
2teaspoons garlic salt
2teaspoons onion salt
1teaspoon kosher salt
3-4pounds beef eye of round or bottom round roast, fat trimmed and cut into chunks
2teaspoons canola oil
2.5cups pineapple, papaya, or mango juice


1.     Mix spices in a small bowl

3.     Rub the spice mixture onto the meat

4.     Heat oil in a large pot over high heat, then sear meat until nice and brown, about 2 minutes per side

5.     Put meat in slow cooker on low or high heat

6.     Pour fruit juice in pan over medium heat and scrape up browned bits, then pour into crockpot over meat

7.     Cook on low for 8 hours or high for 4-5 hours, until tender and falling apart

8.     Shred the meat with 2 forks and then return to slow cooker with juices to cook for 15-30 minutes

9.   Serve as tacos with your favorite toppings
