Smokey and Sweet Baked Beans

1tablespoon vegetable oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1can small red beans, rinsed and drained (15.5 ounce can)
1/3cup ketchup
1/2cup water
2tablespoons brown sugar
1/2teaspoon smoked paprika
salt and pepper, to taste


1. Heat oil over medium high heat until simmering, then add onion and garlic and cook until soft and fragrant, about 4 minutes. Add beans, ketchup, water, brown sugar and smoked paprika. Bring back to a simmer.

2. Cook until liquid has thickened, about 8 minutes then season to taste with salt and pepper and garnish with chopped parsley if desired.
