Stir-Fry Beef Salad with Honey Lime Dressing

Ingredients
- Dressing:
- 1/4cup honey
- 1teaspoon grated lime peel
- 3tablespoons lime juice
- 1pinch cayenne pepper
- 2tablespoons vegetable oil
- Stir-fry:
- 1/2pound lean beef, cut into 2x1/2x1/4-inch strips
- 1/2teaspoon garlic salt
- 2tablespoons chopped onion
- 1teaspoon vegetable oil
- 4cups spinach leaves, torn into bite sized pieces
- 1head iceberg lettuce, sliced into 1/2-inch strips
- 1/4teaspoon slivered almonds, toasted
Instructions

To prepare dressing, combine honey, grated lime peel, lime juice and cayenne pepper, mix well. Whisk in vegetable oil until blended.

Sprinkle beef with garlic salt; mix well. Sauté beef and onion in hot oil in non-stick skillet until beef is cooked to desired degree of doneness.

Add dressing to beef mixture; bring to boil. Remove skillet from heat and add spinach. Quickly stir until spinach is barely wilted. Spoon over iceberg lettuce, sprinkle with toasted almonds and serve immediately.
