Stir Fry Chicken with Vegetables

1-1/2pound boneless, skinless chicken thighs, cut in thin slices
1-1/2cup small cauliflower florets
1-1/2cup small broccoli florets
1cup thinly sliced carrots
1cup sliced green onion, tops included
1teaspoon salt
1/4teaspoon pepper
1/2cup chicken broth, heated


Preheat heavy frypan about 3 minutes on medium high heat; spray with
nonstick corn oil cooking spray. Add chicken slices and stir fry about 3
minutes. Increase heat to high and add cauliflower, broccoli and carrots; continue
to stir fry about 3 minutes. Add onion, salt and pepper, continuing to stir fry
about 3 minutes more. Add warm chicken broth, scraping drippings from bottom of
frypan, and cook about 2 minutes more. Serve alone or with cooked thin
spaghetti or rice.
