Sweet Potato, PB2 and Apple Casserole

Adding PB2 to a sweet potato casserole puts an interesting twist on a comfort-food favorite

Ingredients

6-7medium sweet potatoes, cooked and mashed
1/2cup butter, divided
2 eggs, well-beaten
1/4cup milk
1/4cup maple syrup
1cup sugar
1/2cup PB2
1teaspoon ground ginger
1/4teaspoon cinnamon
1teaspoon salt
1teaspoon vanilla extract
Topping
4medium Braeburn apples, cored and finely chopped
1/4cup orange juice
1/2cup sugar
1/4teaspoon cinnamon
1/2cup chopped walnuts

Instructions

  1. Preheat oven to 350º.  Spray a 13×9 baking pan with nonstick cooking spray.  In a large bowl, combine mashed sweet potatoes, 1/4 c butter, eggs, milk, maple syrup, sugar, PB2, ginger, cinnamon, salt and vanilla extract.  Mix well – may use electric mixer.  Spoon mixture into prepared baking dish.
  2.  In a large skillet, melt remaining 1/4 c butter over medium high heat.  Add apples and cook for 8-10 minutes or until fork tender.  Mix in orange juice, sugar and cinnamon just until blended.  Spoon evenly over sweet potatoes and sprinkle with walnuts.  Bake for 35 to 40 minutes or until hot and bubbly.  Let stand 10 minutes before serving.
