Tasty Beef Strips

  • Yield: 8 servings

2pounds sirloin strips (1x1x1/2-inch pieces)
-- Garlic powder to taste
-- Salt and pepper to taste
1-- red bell pepper, seeded and cut into strips
1-- (10-ounce) can diced tomatoes and green chiles
1cup beef broth
1-- (15 1/4-ounce) can corn, drained
1-- (16-ounce) package rotinin pasta
-- Grated Parmesan cheese, optional

  1. Trim any excess fat from the meat.  Season heavily with the garlic powder, salt and pepper.
  2. In a large skillet coated with nonstick cooking spray over a medium-high heat, cook the meat and red pepper for about 5 minutes or until the meat is brown.  Add the tomatoes, beef broth and corn.  Bring to a boil, reduce the heat and continue cooking 5 to 7 minutes.  Meanwhile, prepare the pasta according to the package directions omitting any oil or salt.  Drain and serve meat and sauce over pasta.  Sprinkle with Parmesan cheese, if desired.
