Tropical Fruit Sunshine Bread

Ingredients
- 1cup all purpose flour
- 1/2cup soy protein powder
- 3/4teaspoon baking soda
- 3/4teaspoon baking powder
- 1cup light brown sugar
- 1/2teaspoon cinnamon
- 1/4teaspoon nutmeg
- 1/4teaspoon salt
- 2-- eggs
- 4tablespoons butter, melted
- 1/4cup V8 Peach Mango Smoothie, or other juice
- 1-- ripe banana, mashed
- 1-- ripe peach or 1/2 ripe mango, chopped
- 1/2-- flaked coconut
Instructions
- Preheat oven to 350F.
- Combine flour and next 7 ingredients (flour through salt). Mix well.
- Combine eggs, butter and smoothie beverage; blend well. Add mashed banana and peach; stir well. Add flour mixture; stir gently. Spoon into a greased 9 x 5-inch loaf pan.
- Bake uncovered 35 minutes or until done. Let stand on baking rack for 15 minutes before serving.
