Udon Noodles with Sesame and Tofu

Ingredients

Vinaigrette:
2tablespoons rice or cider vinegar
1tablespoon soy sauce
1tablespoon dark sesame oil
1/4teaspoon crushed red pepper flakes
1teaspoon minced garlic
1teaspoon minced ginger
Pasta:
1-- (9-ounce) package fresh Udon (Asian Style) noodles
1-- (8-ounce) package smoked tofu (teriyaki flavored), cut into 1-inch pieces
1/2teaspoon salt
1 1/2cups diced cucumber
1cup shredded carrots
1/2cup green onions
2teaspoons toasted sesame seeds

Instructions

  1. To prepare vinaigrette, combine vinegar and next five ingredients.  Whisk well.
  2. To prepare pasta, prepare udon noodles according to package directions, omitting salt.  Combine udon noodles and next 6 ingredients.  Drizzle with vinaigrette and toss well.  Serve room temperature or chilled.
