Umami Turkey Burgers with Caramelized Onions and Roasted Mushrooms

- 1/4cup apple cider vinegar
- 1/4cup water
- 3tablespoons tamari
- 1cup plus 1 tablespoon nutritional yeast flakes, divided
- 6cloves garlic, mashed
- 1/2cup plus 2 tablespoon extra-virgin olive oil, divided
- 1tablespoon canola oil
- 3 yellow onions, thinly sliced
- 8ounces white mushrooms, thinly sliced
- 1pound 93% lean ground turkey
- 2tablespoons Umami sauce
- 1/4cup grated Parmigiano-Reggiano cheese
- salt and pepper
- 4 whole-wheat burger buns
For the Umami Sauce:
Combine apple cider vinegar, water, tamari, 1 cup yeast flakes, and garlic in a blender or food processor.
With machine on slowly drizzle in ½ cup olive oil.
Blend well until mixture becomes thick and emulsified, like mayonnaise. Add salt to taste. Makes: 1-1½ cups. Sauced can be refrigerated and kept for up to 2 weeks but bring to room temperature and shake before using.
For the Caramelized Onions:
Heat canola oil in large skillet over low heat. Add sliced onions and cook 30 minutes, stirring often, until soft and brown. Let cool. Can be stored in lidded container in refrigerator for 3 days.
For the Roasted Mushrooms:
Preheat oven to 400 degrees F. In a large bowl, coat mushrooms with 1 tablespoon olive oil and pinch of salt and pepper. Arrange single layer on baking sheet lined with parchment paper. Roast for 12-15 minutes until soft, browned, and starting to crisp. Keep warm. Set aside.
For the Burgers:
Using your hands, mix ground turkey, 1 tablespoon nutritional yeast flakes, 2 tablespoon Umami Sauce, cheese, 1 teaspoon sea salt and ¼ teaspoon black pepper in bowl. Divide meat into 4 patties.
Preheat grill to medium-high heat. Grill burgers until cooked through, about 5 to 7 minutes on one side then flip over and cook for another 5 minutes on other side.
Place burgers on buns. Top with grilled onions, roasted mushrooms and drizzle each one with a bit of the Umami sauce.
