Vanilla-Marinated Pineapple and Strawberries

Perfect for summer picnics or Memorial Day cookouts, this fruit dish is mellowed by a subtle flavor of vanilla. Look for vanilla beans in your grocery’s spice section. To use, slit them open lengthwise and scrape out the seeds.
Ingredients
- 2cups pineapple cubes
- 1cup strawberry slices
- 1cup blueberries
- 1/4cup sugar
- -- Seeds from 2 vanilla beans
Instructions
- Combine fruit, sugar and vanilla beans seeds in a large bowl. Toss well. Makes about 4 cups.
