Here’s a classic stuffing to enjoy on holidays or whenever you have the craving.

Ingredients

12ounces sliced firm white bread
1tablespoon olive oil
1 carrot, finely chopped
1stalk celery, finely chopped
1small onion, finely chopped
1/4cup loosely packed fresh parsley leaves, coarsely chopped
1/2teaspoon poultry seasoning
1/4teaspoon salt
1/8teaspoon ground black pepper
1 1/4cups canned chicken broth

Instructions

  1. Preheat oven to 400°F. Grease shallow 1½- to 2-quart baking dish and set aside.
  2. Arrange bread slices on a large cookie sheet and toast in oven 16 to 17 minutes or until golden and dry, turning over halfway through toasting.
  3. Meanwhile, in nonstick 10-inch skillet, heat oil over medium heat until hot. Add carrot, celery, and onion and cook, stirring occasionally, until vegetables are tender and lightly browned, about 12 minutes.
  4. Remove skillet from heat, then stir in parsley, poultry seasoning, salt, and pepper.
  5. With serrated knife, cut toasted bread into ½-inch cubes, then place in very large bowl. Reset oven control to 325°F.
  6. Add broth and vegetable mixture to bread in bowl and toss until bread is evenly moistened.
  7. Spoon stuffing into prepared baking dish. Cover with foil and bake 30 minutes. Remove foil and bake 15 to 20 minutes longer or until heated through and lightly browned on top.
