Veggie Couscous
- Yield: 8 to 10 servings
Ingredients
- 1-- (14 1/2-ounce) can vegetable broth
- 1teaspoon olive oil
- 2cups couscous
- 1/2cup chopped red onion
- 2/3cup chopped carrots
- 1-- green bell pepper, seeded and chopped
- 1-- (19-ounce) can chickpeas, rinsed and drained
- 2tablespoons lemon juice
- 2tablespoons balsamic vinegar
- 1/2teaspoon minced garlic
- 1/4cup pine nuts, toasted
Instructions
- In a saucepan, bring vegetable broth and olive oil to a boil. Add couscous, stir, remove from heat. Cover and let stand 7 minutes. Fluff with a fork and place a bowl with onion, carrots, green pepper and chickpeas. Whisk together lemon juice, vinegar and garlic and mix with couscous. Toss in pinenuts.
