Veggie Couscous

  • Yield: 8 to 10 servings


1-- (14 1/2-ounce) can vegetable broth
1teaspoon olive oil
2cups couscous
1/2cup chopped red onion
2/3cup chopped carrots
1-- green bell pepper, seeded and chopped
1-- (19-ounce) can chickpeas, rinsed and drained
2tablespoons lemon juice
2tablespoons balsamic vinegar
1/2teaspoon minced garlic
1/4cup pine nuts, toasted


  1. In a saucepan, bring vegetable broth and olive oil to a boil.  Add couscous, stir, remove from heat.  Cover and let stand 7 minutes.  Fluff with a fork and place a bowl with onion, carrots, green pepper and chickpeas.  Whisk together lemon juice, vinegar and garlic and mix with couscous.  Toss in pinenuts.
