Watermelon, Mint and Chili Salad
- Yield: 6-8 servings
- 1 small seedless watermelon, cubed
- 6 Thai green chilies, finely chopped
- 4 scallions, thinly sliced
- 1/4cup chopped mint
- 1 1/2tablespoons lime juice
- 1/2tablespoon olive oil
- salt, to taste
1. In a large bowl toss watermelon, chilies, scallions and mint together.
2. Drizzle with lime juice and olive oil and season to taste with salt.
