Wheat Bread

Ingredients

2cups Whole Wheat Flour
2teaspoons Salt
1/2ounce Active Dry Yeast
1cup Water
1/2cup Honey
2tablespoons Vegetable Oil
1cup Low Fat Cottage Cheese
4-- Egg Whites
2 1/2cups Whole Wheat Flour
1/2cup Wheat Germ
1/2cup Old Fashioned Oats

Instructions

 

  1. In a large mixing bowl, combine 2 cups of whole wheat flour, salt and yeast.
  2. In a saucepan, heat water, honey and oil to 120 degrees F-130 degrees F; stir in cottage cheese.
  3. Add to flour mixture with egg whites; blend at low speed until moistened.
  4. Beat for 3 minutes on medium.
  5. Add 2 ½ cups whole wheat flour, wheat germ, oats and2 1/2 cups whole wheat flour.
  6. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
  7. Place in a greased bowl, turning once to grease top.
  8. Cover and let rise in a warm place until doubled, about 1 hour.
  9. Punch dough down.
  10. Shape into two loaves.
  11. Place in two 8-in. x 4-in. x 2-in. loaf pans coated with non-stick cooking spray.
  12. Cover and let rise until doubled, about 1 hour.
  13. Bake at 375 degrees F for 35-40 minutes or until golden brown; cover with foil during the last 15 minutes to prevent overbrowning.
  14. Remove from pans; cool on wire racks.
