Whipped Goat Cheese

These easy-to-make snacks, from the 100-Calorie Snack Cookbook by Sally Sampson, will tame your tastebuds without sabotaging your healthy eating plan.


4ounces goat cheese
1/2cup buttermilk
1/4cup chopped fresh basil leaves
2tablespoons chopped sun-dried tomatoes


Place the goat cheese in a small mixing bowl. Add a small amount of buttermilk and mash with a fork. Continue adding buttermilk as needed until the mixture is creamy. Add the basil and tomatoes, mix well, cover and refrigerate for at least 1 hour and up to 2 days. Serve goat cheese mixture with the endive leaves for scooping.
