Whole Wheat Walnut Griddlecakes

Ingredients
- 18ounces whole wheat flour
- 17ounces all purpose flour
- 1-1/2ounce baking soda
- 2-1/2tablespoon sugar
- 4teaspoons salt
- 2quarts buttermilk
- 8-- eggs, beaten
- 4ounces butter, melted
- 1pound chopped walnuts
- -- Walnut Butter (recipe follows)
Instructions

Combine flour, sugar, soda and salt.

Mix in buttermilk, eggs, butter and walnuts just to blend.

Portion spoonfuls onto hot griddle.

Cook over medium heat until golden brown, turning once.

For each serving; plate 2 griddlecakes. Accompany with a ramekin of walnut butter or with maple syrup.
WALNUT BUTTER:

Mix 4 ounces chopped walnuts into 1 pound softened butter.
