Ziti with Broccoli, White Beans and Tuna

  • Yield: 4 to 6 servings

Ingredients

12ounces ziti pasta
2tablespoons olive oil
4cups broccoli florets
1teaspoon minced garlic
1/2cup white wine
1/2cup chicken broth
1-- (16-ounce) can cannellini beans, drained and rinsed
1/4cup grated Parmesan cheese
16ounces tuna filets
-- Salt and pepper

Instructions

  1. Prepare pasta according to package directions. Drain and set aside. 
  2. In a large nonstick skillet, heat olive oil over medium heat and stir-fry broccoli and garlic until broccoli is tender. Add wine, chicken broth and cannellini beans.  Bring to a boil; reduce heat and cook 5 to 7 minutes longer. Add pasta and toss together. 
  3. Meanwhile, season tuna with salt and pepper. Heat a nonstick skillet with nonstick cooking spray and sear tuna on both sides,about 3 minutes. Do not overcook.  Serve tuna and over the pasta mixture.
