Ziti Zucchini

  • Yield: 6 to 8 servings


4cups thinly sliced zucchini
2ounces prosciutto, cut into small pieces
1bunch green onions, sliced
1tablespoon minced garlic
1/2cup minced parsley
1-- (16-ounce) package ziti (tubular) pasta
1/4cup grated Parmesan cheese
1/2teaspoon pepper

  1. In a large skillet coated with nonstick cooking spray, cook zucchini, prosciutto, green onion, garlic and parsley over medium heat, covered, about 10 minutes, until zucchinin is tender.
  2. Meanwhile, prepare pasta according to package directions, omitting any oil and salt.  Drain and add to cooked zucchini.  Add Parmesan, pepper and satlt, tossing well.
