Zucchini Carrot Gratinee

  • Yield: servings


2cups grated zucchini
2cups shredded or matchstick carrots
- salt and pepper
2tablespoons grated Parmesan cheese
2tablespoons broken walnuts


  1. Grate zucchini in a food processor fitted with a grating blade or with a hand grater.
  2. Place zucchini and carrots in a microwave-safe bowl.  Microwave on high 3 minutes.
  3. Remove and add salt and pepper to taste.  Toss well.
  4. Sprinkle Parmesan cheese and walnuts on top.  Microwave 30 seconds.  Divide between 2 dinner plates.
